Simple Vinaigrette for Leafy Salads

Some greens don’t need much - just something bright enough to wake them up.

Ingredients:

3 tablespoons good-quality olive oil

1-1/2 tablespoons red or white wine vinegar

1 tablespoon Dijon mustard

1 tablespoon cool water

Optional: 1 tablespoon maple syrup or honey

Optional: cracked pepper


Instructions:

Put all into a glass jar, cover tightly, and shake until blended. 

Store in the refrigerator.

Makes ½ cup. 

Shake again before serving.
