Roasted Veggie Bowl

This roasted veggie bowl is a simple way to bring together seasonal vegetables, grains, and fresh greens. It’s a flexible meal built around what’s fresh and available, finished with a light homemade vinaigrette.

Ingredients

• 2 cups roasted vegetables
• 1 cup cooked grains (rice, quinoa, etc.)
• 1 handful fresh leafy greens
• 2 tablespoons vinaigrette
• optional toppings: seeds, herbs, cheese

Instructions

  1. Roast vegetables at 400°F until tender and slightly caramelized.

  2. Cook your grain of choice according to instructions.

  3. Add greens to the bottom of a bowl.

  4. Spoon roasted vegetables and grains on top.

  5. Drizzle with vinaigrette and serve warm.
